Eat the yolk! Egg yolks are full of cholesterol but they are also full of important nutrients like fat-soluble vitamins and essential fatty acids. In fact egg yolks are so nutrient dense that a few eggs every day would likely offer you the same or better health insurance than a multi-vitamin.
Concerned about the cholesterol in yolks? Egg yolks have long been accused of being bad for heart health, but studies show cholesterol itself does not cause heart disease. In fact, the University of Connecticut has conducted in depth studies of the effects of eggs on cholesterol levels. These high-quality controlled studies have shown that when people consume three to four eggs per day (including the yolk) virtually all subjects experiences either no change or positive changes in their cholesterol levels.
